High-Protein Roasted Spiced Chickpea Snack

Roasting chickpeas is simple! All you really need are three basic ingredients: chickpeas, coconut or olive oil, and salt. But it’s worth it to spice them up. You can use nutritional yeast, curry, or falafel seasonings. LOTS of options.

I’ve even seen it done with cinnamon sugar although TBH, that one was not my favorite. However, this spanish inspired blend is. I make it in batches so it’s super easy to spoon out a few tablespoons whenever I want to make a batch. 

Make spice mixture: 

  • 3 T cumin 

  • 3 T smoked paprika 

  • 1.5 T garlic powder 

  • 2 T sea salt 

  • 2 T fresh ground black pepper

Mix thoroughly and store in a small mason jar. 

To make the chickpeas: 

  • 2 cans Chickpeas (drained and patted dry) 

  • 2 T spice mix 

  • 2 T coconut oil 

DIRECTIONS 

Preheat oven to 400 degrees. 

Spread the chickpeas on a kitchen towel and gently pat them dry. You can discard some of the  loose skins from the outside of the chickpeas, but i don’t get too particular. Place the chickpeas in  a medium sized bowl and drizzle the oil over the top, toss to combine. Transfer the chickpeas to a cookie sheet and roast for 20-30 minutes. While the chickpeas are warm, toss them with 2 T of the spice mix. Store them in a loosely covered container and they will continue to crisp up.
