Hormone Healthy Sweet n' Salty Maple Granola

In my very humble opinion, this granola is perfection and the answer to all your needs!

Need a quick breakfast? granola

Feeling peckish? granola

Late night snack? granola

This salty sweet combo is not only full of flavor, it’s also jam packed with hormone healthy fats from nuts and seeds and plenty of plant-based proteins to keep your belly full, blood sugar stable and taste buds happy!

So whether your eating it on top of a smoothie or straight out of your hand (no judgment!) I think you’re gonna love it!

INGREDIENTS

  • 3 cups rolled oats

  • 1 cup crunchy cereal (like @forager) or puffed brown rice or quinoa

  • 1/4 cup hemp seeds

  • 1/4 cup ground flax

  • 1 cup pecans chopped

  • 1/2 cup raw pumpkin seeds

  • 1/2 cup vanilla plant based protein powder ( I used @Four Sigmatic)

  • 1 tsp sea salt

  • 1/2 cup coconut oil

  • 1/3 cup maple syrup

  • 1/2 cup almond butter

  • 1 tsp vanilla

INSTRUCTIONS: 

Preheat the oven to 325 degrees.

In a large bowl combine all of the dry ingredients together. 

 In a small saucepan mix together coconut oil, maple syrup and almond butter, stir until smooth, add vanilla and slowly add to dry ingredients. 

Press the mixture into a cookie sheet lined with parchment paper. Bake at 325 degrees for 25-30 minutes until golden brown. Allow to cool for 10 minutes then break into small chunks and enjoy!
