Gut Healthy Lentil Soup

 

Everyone needs a good lentil soup in their repertoire and this is mine.

When I have no idea what to make, I often end up making this. it’s simple, nourishing and I pretty much know the recipe by heart. Plus everyone in my family will eat it so that’s a win!

A simple soup is also one of my favorite hacks to simplify dinnertime throughout the week, it comes together quickly and can easily be doubled so you can cook once and eat twice.

INGREDIENTS: 

  • 1 Package brown or green lentils (rinsed)

  • 2 Quarts Chicken Stock 

  • Olive Oil

  • 4 Large Carrots (diced) 

  • 4 Celery Ribs (diced) 

  • Onion (diced) 

  • 2 tsp Dried Oregano 

  • 2 tsp Dried Parsley 

  • 2 Bay leaves 

  • Sea Salt to taste 

  • Fresh ground Black Pepper 

  • Parmesan rind (optional but SO good)

DIRECTIONS

Add a tablespoon or so of olive oil to a large stock pot. Then saute the diced onions until golden. Then add the carrots and celery and saute until soft. 

Add your washed green lentils, salt, pepper, bay leaf, and other seasonings. I like to add a Parmesan rind for a richer flavor, but it’s optional. 

 Add the chicken stock.

Bring to a boil and simmer on medium low until the lentils  are tender. At least 45 min. 

Serve with additional chopped fresh herbs, i love to add mint and parsley.

*Feel free to add as many different veggies as you like. You can play around with the seasonings as well. Sometimes I’ll add curry or a can of diced tomatoes or coconut milk.
