Seeds are one of my favorite ways to bump up the nutrition factor of any just about any recipe.

Flax seeds, hemp seeds, pumpkin seeds, chia seeds, I love them all.

These no bake bars are packed full of healthy fats, protein, and fiber to support a healthy gut, healthy hormones, and are the perfect fuel for any adventure.

I originally thought we’d add chocolate but I loved them as is, but if you wanted to add chocolate chips I wouldn’t blame you. Let’s mix up a batch!

INGREDIENTS

  • 2.5 cups rolled oats

  • 1 cup puffed brown rice, amaranth, or quinoa (or sub more oats)

  • 1/4 cup plant protein powder (I used sakara protein + greens

  • 1/2 tsp sea salt

  • 3/4 cup raw pumpkin seeds

  • 1/3 cup hemp seeds

  • 3/4 cup runny almond butter

  • 1/4 cup coconut oil

  • 1/3 cup honey or maple syrup

  • 1 tsp vanilla extract

DIRECTIONS

Combine all dry ingredients in a large mixing bowl.

In a separate bowl, mix together the nut butter, coconut oil, and honey.

Slowly add the wet mixture to the dry and stir until well combined. Then press the mixture into an 8 x 8 pan lined with parchment paper.

Place in the freezer for 15-20 minutes then slice into bars.
