Gut Healthy Green Goddess Soup

When you’re craving some deep nutrition, but also something cozy and delicious, this soup delivers!

I’ve wanted to share the recipe with you FOR.EV.ER, but it’s reeeeeallly hard to make broccoli soup look good. But I’m sharing it anyway because you need this soup in your life!

Sometimes when it comes to eating healthier, the tendency is to start cutting out all of the things you think you shouldn’t be eating. But I'm not a fan of restriction so like to focus on the ADD instead!

Cruciferous veggies like broccoli are particularly helpful for hormone health. And adding in more nutrient dense foods is a really SIMPLE way to decrease inflammation and support fertility! Here’s what you need!

INGREDIENTS

  • 1/2 yellow onion (diced)

  • 2 cloves garlic (smashed)

  • 2-3 small zucchini (chopped)

  • 2 heads of broccoli (chopped)

  • A few big handfuls of baby spinach

  • 1/3 cup raw cashews 

  • 2 quarts bone broth (can do 1 if you want it to be a little thicker)

  • 2 cans cannellini beans 

  • 1/4 cup nutritional yeast 

  • 2 tsp sea salt 

  • Black pepper 

  • 1/2 tsp TJs Umami Mushroom seasoning (optional)

  • 2 T Hemp seeds 

DIRECTIONS


Sauté all of the veggies adding salt and pepper to taste. Add the veggies along with the remaining spices, cashews, beans and bone broth to a high speed blend and blend until smooth. 

Top with fresh chopped parsley and cilantro for an even more power packed meal! 

This green goddess soup is perfect on its own, but I love serving it alongside some fresh baked sourdough or the grain-free bread from my cookbook Nourish and Thrive!
